Having completed nearly two end-grain cutting boards including this one, I have plenty of knowledge and opinions to share. It seems like most people finish theirs with mineral oil because it's easy and food-safe, but mineral oil washes out and I wanted something to permanently seal the wood fibers inside the board. Waterlox is one of my favorite finishes (not sponsored), and it's food-safe when fully-cured. I expect, considering the quantity of oil inside this board, that it won't be fully cured for approximately a month. At that point, a periodic touch-up with mineral oil would be an optional step to keep it looking nice.
