Napoli may be the birth place of pizza, but Detroit is pizza heaven. This is the way all pizza should be made, and while Neapolitan style has always been my favourite, the Detroit style pizza has now be crowned with that title! An unbelievably light pizza with a crunchy base and a crown of crispy cheese around the edge.

What makes this special is that it’s a deep focaccia style base, and this sourdough version is jacked up on flavour. The tin keeps the dough and the toppings in check making this an easy peasy pizza to cook at home.

Timescales are really manageable for this too. You can complete the first proof in the fridge, and then the final proof in the tin for a couple of hours on the side at room temp. Or you could let the second proof go overnight in the fridge adding a serious depth of flavour to the sourdough base.

The Detroit pizza was originally cooked in blue steel pans that had been used in the automotive industry in the local area. The story goes… that… Gus Guerra who owned a late night gambling and drinking den asked “Connie” to make a pizza in the blue pans, she used her family’s Sicilian pizza recipe. And so in 1946 the first Detroit pizza joint called “Buddy’s Rendezvous” was born… and the rest as they say, is history.

You can find some steel pans for sale on the web although I I’m not sure if they are authentic and they cost a fair few quid (or bucks). But you can find a non stick version on amazon which is as cheap as chips. I got mine for £10.00. For the home cooked pizza where you don’t want to mess around with rolling and your goal is a deep dish rectangular pizza then this is the one for.

Forget Detroit being Mo Town, it’s definitely, Dough town!

Recipe:

Pizza dough (makes enough for 2 pizzas):

170g Sourdough starter (Refreshed at 1:1:1 ratio and used active)
330g water
500g flour (I used an all purpose white flour with 13.2% protein)
15g sea salt

Tomato sauce:

1 400g can of whole peeled tomatoes
Oregano
Black pepper
Salt
Garlic

Jerk Chicken Marinade:

Onion
Scotch bonnet
Ginger
Garlic
Pimento (all spice)
Touch of sugar
Salt
