This pancake recipe is absolutely perfect. They are super fluffy and tender. I love to freeze these so we have them on hand whenever anyone wants a pancake
Pancake Recipe
2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 ¾ cups milk or as needed
2 eggs
2 tablespoons melted butter or oil
1 teaspoon vanilla
In a large bowl mix dry ingredients, then add in wet ingredients and combine just until all ingredients are incorporated. Do not over mix. Butter or grease griddle or frying pan and cook on medium heat, flipping once you see bubbles appear.
