Here's how I made ice cream sandwiches. This cookie recipe is excellent, it tastes like brownies. The texture is not too firm and not too soft. Perfect for ice cream sandwiches and they have much more taste than store bought too. This is a great recipe for soft cut out chocolate cookies.
Brownie Roll-Out Cookies (for ice cream sandwiches)
1 1/2 cups all-purpose flour
1/8 tsp. salt
1/4 tsp. baking powder
1 stick of butter, softened
3/4 cups sugar
1 egg
1/2 tsp. vanilla
1/3 cup cocoa
Cream together butter and sugar. Add egg and vanilla and mix well. Add cocoa and mix well. In another bowl mix together flour, salt and baking powder. Mix well then add the dry ingredients a little at a time to the wet ingredients and mix until smooth. Wrap in plastic wrap and chill for at least one hour. Roll out dough on floured surface to 1/4" thickness. Cut into desired shapes. Bake at 350 for 8 to 11 minutes until the edges are firm and the centers are slightly soft and puffed. Cool slightly then transfer to a wire rack to cool completely. Makes enough cookies for 11 ice cream sandwiches if a large biscuit cutter is used.
