Here are all the Time Trials that are available after the first mission: Sanchez, Quad Bike and BMX. There is another Time Trial that is unlocked much later in the game. Quad has 4 courses, BMX has 8 courses and BMX has 12 courses. From experience, Quad Bike is more challenging since you can fall off easily.
