Here's a great way to use an inexpensive corned beef and turn it into amazing pastrami.
Ingredients:
4-5 lb corned beef flat
Rub:
1/2 cup coarse ground black pepper
1/4 cup raw sugar
2 Tbsp coriander
1Tbsp dry mustard
1.5 - 2 Tbsp garlic powder
1 tsp of cayenne or to taste
1 Tbsp onion powder
Rinse the corned beef in a water bath. Change the water every 4 hrs. At least 12 hrs if not longer.
Dry it off and add the rub liberally. It should be well coated.
Smoke the beef in a 275-300 degree smoker until it hits about 160 internal temp.
Apple, cherry, pecan, hickory all make good flavors. Use what you like.
When it hits 160-165, take it off. Put it in a pan with about a cup of beef broth, cover and put it back on the grill till it hits about 200, probe for tenderness since that's more important.
Take it off the grill and let it rest for about 30 mins before slicing into thin slices.
