Hey y'all this is a simple basic potato salad and one that I love any time of year. You can eat it like I make it here or add your own twist on it. I hope y'all give this a shot!

Classic Potato Salad Recipe 2-3 people
4 russet potatoes peeled or not
2 hard boiled eggs slice em up
2-3 stalks celery diced
1/2 onion diced
2 green onions diced
Salt and pepper to taste
1 tsp cayenne (optional)
2 T mustard
1 tsp dry mustard
1 cup Mayonnaise
1 tsp parsley fresh or dry
Cube up the potatoes into 3/4 inch cubes and soak in water to release the starch. Rinse a few times to get the starch out. Put back in the pot and add enough water to cover. Bring up to a boil for 8 mins. I like texture in mine so don't overcook em! :)
While the potatoes are cooking go ahead and make the dressing. It's as simple as mixing all ingredients to taste.
Pull the potatoes and I usually shock them in cold water and let them sit.
Add the potatoes, mix and taste, add more mayo or spices as needed.
Let it sit in the fridge for a few hours and BOOM enjoy! :)
