Day 9 of my Edible Christmas Gift Countdown
Let’s be real: these gingerbread truffles taste like holiday cheer punched you in the mouth (in the best way). They’re soft, warmly spiced, dipped in chocolate, and look way fancier than they actually are. The hardest part is not eating them all before they make it to the gift box.

YOU’LL NEED:
⚬ 16 oz gingersnap cookies (find them near the Oreos/graham crackers)
⚬ 8 oz cream cheese
⚬ 1 tsp ground ginger
⚬ 1/2 tsp ground cinnamon
⚬ 1/2 tsp ground nutmeg
⚬ 1 tsp vanilla extract
⚬ 2 cups milk chocolate chips
HOW TO MAKE ‘EM:
1️⃣ Pulverize the gingersnap cookies in a food processor or blender until they’re fine crumbs.
2️⃣ Stir in ginger, cinnamon, and nutmeg.
3️⃣ Add cream cheese and vanilla, then mix until a smooth dough forms.
4️⃣ Roll into about 48 small balls. Pop them in the fridge for 30 minutes to firm up.
5️⃣ Melt the chocolate chips in the microwave, stirring every 15 seconds so it doesn’t burn.
6️⃣ Dip the chilled balls into melted chocolate using a skewer or fork. Place on wax paper. Smear over any spots that need extra love.
7️⃣ Chill again for 15–20 minutes, or until fully set. Try not to eat them all. (Or do. I’m not the boss of you.)
STORAGE + GIFT TIP:
