This is a 3 part series of a restoration project for a vintage German Chef's knife. This knife is a family heirloom and requires some effort to get it back into good working condition. This knife was used for butchering meat, but has not been in use for many years. Time to change that and make it one of the go-to knives in our kitchen. Part 1 is restoration of the cutting edge using Japanese water stones and a leather stop. This requires a lot of patience and some skill. Part 2 will a storage solution for the knife to keep it safe and to keep people safe (This is an 18" long knife) which does not fit into any ordinary knife block.
