FAKE MAC AND CHEESE

INGREDIENTS
1 large head cauliflower, cut into small florets (1 LB of florets)
Vegetable oil spray
¼ teaspoon of salt (for cauliflower florets)
½ teaspoon kosher salt (for cheese sauce)
1 cup heavy cream
3 ounces cream cheese, cut into small pieces
1½ teaspoons Dijon mustard
2 cups shredded sharp Cheddar (one 8 oz. package)
¼ teaspoon freshly ground black pepper
⅛ teaspoon garlic powder
DIRECTIONS
Preheat oven to 375° F. Break cauliflower into florets.
Spray an 8” x 8” baking dish with vegetable oil spray.
Microwave cauliflower in loosely covered container for 10 minutes until crisp tender. Drain well and pat between several layers of paper towels to dry. Lightly salt the florets. Transfer the florets to the baking dish and set aside.
Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1½ cups of the cheddar cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining ½ cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve.
KFC STYLE CHICKEN

INGREDIENTS
6 chicken thighs boneless
1 large egg
3 TBS of milk (or half cream / half water)
1½ teaspoons of crushed garlic
½ tbsp basil
½ tsp thyme
⅓ tsp oregano
1 tbsp celery salt
1 tsp black pepper
1 tsp powdered mustard
1 tsp paprika powder
1 tsp ginger powder
1 tsp garlic powder
1 tsp fresh turmeric optional
1 tsp white pepper
1 tsp chili red flakes optional
½ teaspoon of salt
COATING AND FRYING
1 cup of unflavored whey protein isolate powder (you can also use almond flour for coating).
Your choice of oil for deep frying
INSTRUCTIONS
Before chopping the chicken thighs into small chunks, make sure to thoroughly wash and dry them.
Thoroughly mix together the crushed garlic and all the spices. Add the milk and eggs and whisk. Stir in the chicken and mix well. Seal the bowl of chicken with plastic wrap and let it chill in the fridge for an hour or more.
Pour the protein powder in a plastic container with a lid. Put the chicken in the container before replacing the lid. Shake well to coat the chicken entirely. Do NOT remove the chicken pieces from the container of protein powder until you are ready to put them in the deep fryer. (I made the mistake of doing so and it turned into goo).
Set a deep fryer to 375 degrees and heat the oil in the fryer. Fry the chicken in batches for 3 minute until the chunks become golden brown and crispy. Do not over cook it as I did!
Transfer to a platter with any keto-approved dip of your choice.
DIPPING SAUCE FOR BOGUS KFC CHICKEN

Ingredients
½ cup mayonnaise
¼ cup ketchup
½ teaspoon garlic powder
¼ teaspoon Worcestershire sauce
½ teaspoon freshly ground black pepper, or more to taste
DIRECTIONS:
Whisk mayonnaise, ketchup, and garlic powder together in a bowl; add Worcestershire sauce to the mayonnaise mixture and whisk until smooth.
Sprinkle enough black pepper over the surface of the mayonnaise mixture to cover; stir to incorporate. Repeat sprinkling and stirring of black pepper.
Cover bowl with plastic wrap and refrigerate until the seasonings have blended into the sauce, at least 2 hours.
