More foraging for wild vegetables in northern Japan. Here's more information about the wild vegetables in this video:
* Shidoke (Momijigasa) - Cacalia delphiniifolia (?!) Delicious when lightly boiled and seasoned only with tsuyu or soy sauce. Also an Iwate University study is claiming that it can be used as an anti-cancer agent! http://www.ccrd.iwate-u.ac.jp/liaison...
* Udo (or Yama Udo - mountain asparagus) - can be put in soups or stir-fried.
*Urui (Hosta shoot) - delicious lightly boiled, or with vinegar and miso, with salad dressing, or in miso soup.
*Zenmai (Asian royal fern) - somewhat difficult to prepare. you need to boil them, dry them out, and rub them to soften them or they'll be too tough and rubbery to eat. After softening them they're great pickled.
*Aiko (Nettles) - great in soup, stir fry, etc.
*Wasabi - You can eat the leaves and stem as well as the "root" (it's actually considered the stem). For the root part, be sure to grate it and a bit of sugar will bring out the spicy zing.
Regarding the Hanamaki dialect expression "kappa o toru" - it's "kyappari suru" in Morioka, a nearby municipality, and varies throughout the region. It means to slip or step in water so that water gets inside your boots. (There are lots of people walking around in streams in Iwate.)
