M5 Pro with 64GB or M5 Max with 36GB for video editing and local AI models? I'd take the M5 Pro with 64GB and skip the Max chip. From my testing, going up in RAM increased AI performance faster than going up a chip level. Moving from 36GB to 64GB nearly doubles your RAM, and local AI models need to run on RAM because it's much faster than the internal SSD. Giving it the most RAM possible will run those models faster than the better chip would.
