There’s a quiet sort of ceremony in lifting a lever. It’s tactile, unhurried — a pause between the grind of daily life and the grind of coffee beans. Today I’m brewing on the Flair 58 manual lever espresso machine, showing not just the mechanics, but the rhythm of a real-world workflow.
I start by preheating the Flair 58 to the three setting and setting my kettle to 94 °C — a small ritual that sets the stage. Then it’s 20 grams of beans, ground on the Comandante C60 Barracuda, a hand grinder with massive 60 mm burrs that chews through coffee fast but still gives you that human connection. Even with a hand grinder, I RDT the beans to keep static down; small details make a difference when you’re aiming for clean prep.
Dosing out into a NORMCORE high-extraction basket, I needle, level, and tamp with the Flair’s included tamper. The puck screen goes on top like a final seal before the performance begins. Hot water at 94 °C waits in a Varia Aura jug. The workflow is smooth now — scales tared, shot glass ready, kettle humming.
Then comes the part that makes a manual lever like the Flair 58 so different: the pre-fill, the careful removal of false pressure, the slow pre-infusion. I start at two bars, watching for those first glimmers of espresso, before ramping up to eight or nine bars, then tapering back down. It’s not just pulling a shot; it’s shaping a pressure profile with your own hands.
I’m aiming for a classic 20 g in, 50 g out — a long black that’s rich yet clean. And when the lever returns upright, I press a little more water through to dry out the puck, a small trick that makes cleanup effortless. The puck screen pops out with a magnet, the basket is clean, and I’m left with a perfectly brewed long black and a quiet kitchen.
This is what living with the Flair 58 looks like day-to-day — not a spec sheet, but a ritual. A workflow that rewards attention. A machine built for those who want to experiment with pressure profiling, puck prep, and workflow details without losing the tactile joy of manual brewing.
