I saw a youtuber friend, Rus Jones of Smoky Ribs BBQ, make a fabulous fried fish with butter sauce. It was rich, luscious and bold! I have to try it, so I went out and got all the ingredients, ah, ah, ah… except one. You know what it is, the fish! Let’s see if we can catch some!
LOW-CARB FRIED FISH RECIPE
This was inspired by the recipe found here: notcrocker.com/2013/08/01/crispy-fried-fish-with-homemade-caper-tartar-sauce
INGREDIENTS
1 LB any kind of mild white fish fillets
1 cup or a little more grated parmesan
1 cup or a little more almond meal/flour
½ tsp chili powder
½ tsp dried parsley
¼ tsp salt
¼ tsp pepper
4 tbsp mayo (¼ cup)
2 large eggs
Stick of butter and oil for frying
DIRECTIONS
In a small casserole dish, stir together the dry ingredients for the fish coating.
Whisk the egg with the mayo in a medium bowl. Set aside.
Dip the fish into the egg mixture, draining off any extra. Dredge the fillets in the breading mixture, pressing to ensure a thorough and even coating. Place on a plate until ready to fry.
In a large skillet, add the stick of butter and enough oil to cover bottom. Heat to medium high (350° - 370° F). Gently drop the fish sticks in the skillet. Cook for 2 minutes on each side, until golden. Do this in batches if necessary so as not to overcrowd the skillet. Remove the cooked fish to a paper-towel covered plate.
VANILLA BEURRE BLANC SAUCE (for fried fish)

⅓ cup of lime juice
1 teaspoon of lime zest
1 TBS of Pure vanilla extract
2 cloves of minced garlic
1 TBS parsley, chopped
1 TBS cilantro, chopped
2 sticks of butter (½ LB) room temperature
¼ teas of salt
¼ teas of pepper
⅓ cup of lump blue crabmeat
DIRECTIONS:
To a large skillet add wine, lime juice, and vanilla extract. Bring to a boil on high heat and reduce until it thickens to about ⅓ to ¼ original volume.
Turn heat off, remove the skillet from burner, add minced garlic, parsley, cilantro, butter. Let heat from pan melt butter if possible. Bring heat up a little if necessary but only enough to melt the butter.
After butter melts add crabmeat to thoroughly warm it in butter. Pour crab butter mix over fish and enjoy!
FISHING EQUIPMENT:
1/16 ounce lead Gopher Mushroom Head Jig with #4 hook upon which is threaded at least one mealworm.
The spinning reel is a Pflueger Trion GX-5. This model is no longer made.
The spinning rod is a tiny Daiwa SMC401ULFS Spinmatic-C SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 pound line test recommended). It can be found on Amazon, Fish USA, and other places.
The spinning reel line is SpiderWire, Ultracast, Invisi-Braid in 10 pound test, 2 pound monofilament equivalent.
THE BOAT: is a Bass Hunter that I ordered from Bass Pro Shops about 12 years ago. They no longer sell it. Also, the Bass Hunter company seems to be out of business. Boats like it are still sold under the name Sun Dolphin. Do a Google search for “two man fishing boats.”
THE LAKE:
The lake is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE:
largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS:
We had biologists come out and do an electroshock survey of the lake. They found too many small, stunted bass. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.
LARGEST FISH CAUGHT: The biggest was a grass carp I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The larges crappie was 14¾ inches and weighed 2 LBS and 1 oz. I did not measure the largest bluegill, but it had to be at least 10 inches. Finally, my largest bass was 6¾ pounds caught here at Lake Ketchabigwon.

![Bass Fishing for Fried Fish (with a low carb twist)
Today I saw a recipe for yellow perch (here we call them Lake Erie perch). But it uses flour. I think I could make it with a flour substitute, and a perch substitute, Let’s see if we can make a great fried bass dinner! Continue reading below for the recipes, fishing equipment and much more information.
Loaded Cauliflower
Ingredients:
2 LBS. cauliflower florets (from one large head of cauliflower)
8 oz shredded sharp cheddar cheese, divided (I used even more)
8 oz shredded Monterey Jack cheese, divided
8 oz block cream cheese, softened
4 tablespoons heavy cream (I used a little more)
2 bunches green onions, sliced (1½ cups)
8 slices bacon, cooked and crumbled
1 clove garlic, grated (I used ½ teaspoon of minced from jar)
¾ teaspoon salt
pepper to taste
Instructions:
Preheat oven to 350° F.
Microwave cauliflower until tender (about 15 minutes)
While cauliflower is cooking, cream together 6 oz of the shredded cheddar, 6 oz of the Monterey Jack, cream cheese, and heavy cream
Stir in sliced green onions, chopped bacon, and garlic
Set aside
Drain any liquid from cooked cauliflower and add to cheese mixture
Stir cauliflower and cheese mixture together
Taste for seasoning, and add as necessary
If you want a finer texture, give a few mashes with the potato masher
Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and Monterey Jack cheese (I added even MORE cheddar cheese).
Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly

Fish Fillets with Low-Carb Four
1½ cups of low carb flour or all-purpose flour
[Get low-carb flour here: netrition.com]
2 tablespoons paprika
½ to ¾ teaspoon salt
1 egg
1 cup heavy cream
¾ cup of water to dilute the heavy cream
½ cup butter (one stick)
1 to 1½ pounds of small bass or other small mild fish fillets
DIRECTIONS
Mix flour, paprika, and salt together and set aside.
In a small bowl, blend the egg, the cream and water.
Heat butter in a large frying pan add cooking oil to just cover the bottom.
Dip fish fillets in egg wash first and then into the flour mixture.
Carefully place them into the hot butter in the frying pan and brown on both sides.
Remove from the butter and drain on a paper towel to absorb excess butter and oil.
Serve immediately.
THE HOOK: Fish hook was a Mustad Weedless Weighted Hook in size 1/0 with a 1/32 ounce lead weight. It impaled on the worm with the hook fully exposed and NOT Texas rigged.
THE LURE: I cannot remember the name of the 7 inch plastic worm I used here. It is probably more than 10 years old.

The baitcasting line is Stren Original in 8 pound test monofilament in clear blue.

WHY I DON’T FISH FOR CATFISH: Yes, there are channel catfish in the lake but I’m not knowledgable about how to fish for them. Rigging for them is confusing to me. Also, I don’t enjoy sitting and waiting for a bite. It seems boring.

![Angling for Tempura Battered Fish
I found a new product for making a low-carb tempura batter. I’d love to try it on some freshly caught fish. If we can’t get any, don’t worry. There’s plenty of fish in the freezer, plus I have some other ideas. But first let’s try some ice fishing from the comfort of our shelter there on the dock! The ice fishing lure is called a “Forage Fry” from Northland Fishing Tackle. It has a #8 hook baited with a mealworm. Any small panfish ice fishing lure seems to work equally well in my experience.
THE ROD: is a Fenwick, EliteTECH Ice, ETI23UL, 23”, Ultra Light (2-4 lb. line).
THE REEL: A Frabill model P-10 Sub Zero Ultra Light has been discontinued.
THE LINE: Trilene Micro Ice 4 LB test monofilament in solar green color.

Recipe:
½ LB of any small (or cut up) mild white fish fillets
1 LB of raw shrimp, peeled and cleaned
8 ounces of onion rings
⅔ Cup Plus ¼ cup of ice cold water
2 Eggs, beaten (I mistakenly used only 1 in the video)
1¼ Cups of LC Foods Tempura Batter (available at netrition.com)
Using LC Foods Tempura Batter
Here are the instructions from back of package. Confusing, huh?
[The following is the part I did NOT follow]:
Prepare onions, green beans, snow peas, eggplant, peppers, carrots, asparagus, zucchini, broccoli, mushrooms, squash, cauliflower, fish, chicken, shrimp, scallops. After washing, cut into desired sizes and dry pieces very thoroughly. Place on an uncovered tray in the refrigerator for 30 minutes or until ready to fry. Toss or shake very lightly in a little dry LC-Tempura mix. Line draining plates with newspaper and top with paper towels.
[The following is the part that I DID follow, but I DOUBLED the recipe]:
Batter for 50 pieces: In a medium bowl place ⅓ cup plus 2 Tbsp of ice cold water and 1 beaten egg and mix. Add ½ cup + 2 Tbsp LC-Tempura Batter Mix and whisk together. Refrigerate batter for 10 minutes. For additional flavor add garlic powder, parsley or paprika to your taste.
Frying: Use a heavy pan (like cast iron) if possible. Add 1 of canola, corn, sunflower or peanut oil. Heat oil to approx. 360°F. Oil is the perfect temperature when a batter droplet goes to the bottom and then shoots up to the surface floating to sizzle. Overheated oil will brown too quickly. low-heated oil will cause soggy/greasy tempura. Do not add too many pieces at a time. Flip pieces only once and fry until golden brown. Dont stack pieces on top of each other when draining. Serve hot for maximum crispiness.
