Everyone asks me, why don’t you ever show a crappie recipe? To me, they have a mushy texture with a dry cottony mouthfeel. Yet in crappie cakes, they’re great! I just need to get some crappie. Click SHOW MORE for info on the equipment, fish, lake, and recipes.

THE BOAT: is a Bass Hunter that I ordered from Bass Pro Shops about 13 years ago. They no longer sell it. A subscriber informed me that he found the boat sold here: sportsmansguide.com/product/index/bass-hunter-ex-boat?a=670576. It looks very similar to my model.
THE MOTOR: A Minn Kota, Endura 55. It has a short shaft for small boats, and has 55 LBS of thrust. It runs on a single 12v, deep cycle battery. This exact model has been discontinued.
THE BAIT: mealworms fixed to a 1/16 ounce jig head.
THE SPINNING REEL is a Pflueger Trion GX-5. This model is no longer made.
THE SPINNING ROD is a tiny Daiwa SMC401ULFS Spinmatic-C SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 pound line test recommended). It can be found on Amazon, Fish USA, and other places.
THE SPINNING REEL LINE is SpiderWire, Ultracast, Invisi-Braid in 10 pound test, 2 pound monofilament equivalent.
THE LAKE is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It is 12 feet at it’s deepest. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE are largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS AND RETURN LARGER BASS: We had biologists come out and do an electroshock survey of the lake. They found too many small, stunted bass. There is only so much biomass to go around, and there are too many mouths to feed. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.
WHERE TO GET A CAP LIKE MINE: You can get a “Juanelo Bait & Tackle” baseball cap here, inkpixi.com/by-clothing-type/baseball-hats. In fact, you could put your own name on it!
VIDEOGRAPHY:
The principal camera is my iPhone 6s Plus on a tripod. I also use an iPhone 5s as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode microphone indoors to help lessen the echo. The video is edited on a MacBook Pro using Final Cut Pro X.

AWESOME CRAPPIE CAKES
INGREDIENTS:
1 Tbsp butter (to cook peppers and onions)
½ sweet onion, finely chopped
Red bell pepper, seeded and finely chopped
2 Tbsp butter (to cook crappie cakes, I used bacon grease)
Cooking oil to cover bottom of large pan (to cook crappie cakes)
1 to 1½ LB Crappie (or other small fish) cooked in microwave and shredded
1 teas minced garlic from jar
2 TBS of almond flour (or all purpose flour)
2 TBS of coconut flour (or all purpose flour if needed to firm up crab cakes)
3 Tbsp of breadcrumbs
1 teaspoon dried red pepper flakes
½ teas Lawry's or McCormack’s Lemon Pepper
1 teaspoon Old Bay Seasoning (or Cajun seasoning)
3 TBS mayonnaise
1 egg
DIRECTIONS:
Melt the 1 TBS of butter in a medium pan and add peppers and onions. Cook over medium heat for about 5 minutes. Dump mixture into a small bowl and set aside.
In a large pan, heat the 2 TBS of butter and enough cooking oil to cover bottom of pan to a depth of about ⅓". Heat to medium-high.
Put all the rest of the ingredients into a large bowl. Add the chopped peppers and onions. Mix everything thoroughly with a spatula or your hands. Form mixture into flatten balls about 2 to 3" in diameter (I use a small ice cream scoop). Each time you have formed a ball, flatten it a bit. Put them on a plate until all patties are formed. Cook the patties for 3 minutes on each side until nicely browned on both sides. Move them to paper towels when finished. Serve with your favorite tartar sauce.
On 12/26/10 I adapted this recipe from the one presented here:

![Bass Fishing for Fried Fish (with a low carb twist)
Today I saw a recipe for yellow perch (here we call them Lake Erie perch). But it uses flour. I think I could make it with a flour substitute, and a perch substitute, Let’s see if we can make a great fried bass dinner! Continue reading below for the recipes, fishing equipment and much more information.
Loaded Cauliflower
Ingredients:
2 LBS. cauliflower florets (from one large head of cauliflower)
8 oz shredded sharp cheddar cheese, divided (I used even more)
8 oz shredded Monterey Jack cheese, divided
8 oz block cream cheese, softened
4 tablespoons heavy cream (I used a little more)
2 bunches green onions, sliced (1½ cups)
8 slices bacon, cooked and crumbled
1 clove garlic, grated (I used ½ teaspoon of minced from jar)
¾ teaspoon salt
pepper to taste
Instructions:
Preheat oven to 350° F.
Microwave cauliflower until tender (about 15 minutes)
While cauliflower is cooking, cream together 6 oz of the shredded cheddar, 6 oz of the Monterey Jack, cream cheese, and heavy cream
Stir in sliced green onions, chopped bacon, and garlic
Set aside
Drain any liquid from cooked cauliflower and add to cheese mixture
Stir cauliflower and cheese mixture together
Taste for seasoning, and add as necessary
If you want a finer texture, give a few mashes with the potato masher
Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and Monterey Jack cheese (I added even MORE cheddar cheese).
Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly
Enjoy
Fish Fillets with Low-Carb Four
1½ cups of low carb flour or all-purpose flour
[Get low-carb flour here: netrition.com]
2 tablespoons paprika
½ to ¾ teaspoon salt
1 egg
1 cup heavy cream
¾ cup of water to dilute the heavy cream
½ cup butter (one stick)
1 to 1½ pounds of small bass or other small mild fish fillets
DIRECTIONS
Mix flour, paprika, and salt together and set aside.
In a small bowl, blend the egg, the cream and water.
Heat butter in a large frying pan add cooking oil to just cover the bottom.
Dip fish fillets in egg wash first and then into the flour mixture.
Carefully place them into the hot butter in the frying pan and brown on both sides.
Remove from the butter and drain on a paper towel to absorb excess butter and oil.
Serve immediately.
THE HOOK: Fish hook was a Mustad Weedless Weighted Hook in size 1/0 with a 1/32 ounce lead weight. It impaled on the worm with the hook fully exposed and NOT Texas rigged.
THE LURE: I cannot remember the name of the 7 inch plastic worm I used here. It is probably more than 10 years old.
THE BOAT: The boat is a Bass Hunter I ordered from Bass Pro Shops about 12 years ago. They no longer sell it. Also, this model is no longer available, but newer models like it are still sold. Check here: http://www.sportsmansguide.com/product/index/bass-hunter-ex-96-boat?a=670576&pm2d=CSE-SPG-15-PLA&utm_medium=PLA&utm_source=Google&utm_campaign=CI&ci_src=17588969&ci_sku=WX2*0186929000000&gclid=COz4v7CNocsCFQmQaQod EG4g
THE REEL: The baitcasting reel is a Shimano Calcutta 50B, from about 2004. This model is no longer made.
THE ROD: The baitcasting rod is a Shimano Compre, Model CPC68MC, 6’ 8” fast action, medium power. Suggested lure weight ⅛ to ¼ ounce. Suggested line weight 6 - 12 pound test. Purchased April 2016.
The baitcasting line is Stren Original in 8 pound test monofilament in clear blue.
THE LAKE: The lake is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE: largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS: We had biologists come out and do an electroshock survey of the lake. They found too many small, stunted bass. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.
WHY I DON’T FISH FOR CATFISH: Yes, there are channel catfish in the lake but I’m not knowledgable about how to fish for them. Rigging for them is confusing to me. Also, I don’t enjoy sitting and waiting for a bite. It seems boring.
LARGEST FISH CAUGHT: The biggest was a grass carp I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat of 10 pounds. The larges crappie was 14¾ inches and weighed 2 LBS and 1 oz. I did not measure the largest bluegill. Finally, my largest bass was 6¾ pounds.
VIDEOGRAPHY: The camera is my iPhone 6s Plus on a tripod. I also use an iPhone 5s as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode microphone indoors to help lessen the echo. The video is edited on my MacBook Pro using Final Cut Pro X.

![Angling for Tempura Battered Fish
I found a new product for making a low-carb tempura batter. I’d love to try it on some freshly caught fish. If we can’t get any, don’t worry. There’s plenty of fish in the freezer, plus I have some other ideas. But first let’s try some ice fishing from the comfort of our shelter there on the dock! Click “SHOW MORE” for fishing equipment, lake info and recipes!
The ice fishing lure is called a “Forage Fry” from Northland Fishing Tackle. It has a #8 hook baited with a mealworm. Any small panfish ice fishing lure seems to work equally well in my experience.
THE ROD: is a Fenwick, EliteTECH Ice, ETI23UL, 23”, Ultra Light (2-4 lb. line).
THE REEL: A Frabill model P-10 Sub Zero Ultra Light has been discontinued.
THE LINE: Trilene Micro Ice 4 LB test monofilament in solar green color.
THE LAKE: is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE: largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
LARGEST FISH CAUGHT: The biggest was a grass carp I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The larges crappie was 14¾ inches and weighed 2 LBS and 1 oz. I did not measure the largest bluegill, but it had to be at least 10 inches. Finally, my largest bass was 6¾ pounds caught here at Lake Ketchabigwon.
LEARN HOW TO FILLET A FISH HERE: https://youtu.be/KgiGqlrB0LM
Recipe:
½ LB of any small (or cut up) mild white fish fillets
1 LB of raw shrimp, peeled and cleaned
8 ounces of onion rings
⅔ Cup Plus ¼ cup of ice cold water
2 Eggs, beaten (I mistakenly used only 1 in the video)
1¼ Cups of LC Foods Tempura Batter (available at netrition.com)
Using LC Foods Tempura Batter
Here are the instructions from back of package. Confusing, huh?
[The following is the part I did NOT follow]:
Prepare onions, green beans, snow peas, eggplant, peppers, carrots, asparagus, zucchini, broccoli, mushrooms, squash, cauliflower, fish, chicken, shrimp, scallops. After washing, cut into desired sizes and dry pieces very thoroughly. Place on an uncovered tray in the refrigerator for 30 minutes or until ready to fry. Toss or shake very lightly in a little dry LC-Tempura mix. Line draining plates with newspaper and top with paper towels.
[The following is the part that I DID follow, but I DOUBLED the recipe]:
Batter for 50 pieces: In a medium bowl place ⅓ cup plus 2 Tbsp of ice cold water and 1 beaten egg and mix. Add ½ cup + 2 Tbsp LC-Tempura Batter Mix and whisk together. Refrigerate batter for 10 minutes. For additional flavor add garlic powder, parsley or paprika to your taste.
Frying: Use a heavy pan (like cast iron) if possible. Add 1 of canola, corn, sunflower or peanut oil. Heat oil to approx. 360°F. Oil is the perfect temperature when a batter droplet goes to the bottom and then shoots up to the surface floating to sizzle. Overheated oil will brown too quickly. low-heated oil will cause soggy/greasy tempura. Do not add too many pieces at a time. Flip pieces only once and fry until golden brown. Dont stack pieces on top of each other when draining. Serve hot for maximum crispiness.
