Here’s my Fig & Cinnamon Gimlet with @Empress1908Gin Elderflower Rose Gin. Figs are in season, and this riff on the classic Gimlet is the perfect transition between hot summer days and the fall flavours to come.

Empress Fig & Cinnamon Gimlet
* 2.5 oz Empress Elderflower Rose Gin
* 2 oz Fig & Cinnamon Cordial
Simplified Fig & Cinnamon Cordial
* Peel and thinly slice fresh figs.
* Add them to a jar with an equal weight of sugar. For every 250 g of sugar, add 3 g of cinnamon.
* Let sit for 24 hours, stirring 2–3 times to help dissolve the sugar.
* Strain through a nut milk bag and measure the yield.
* Acidify with an equal amount of fresh lime juice or the acid solution below.
Acid Solution
For every 89 g of water:
* 4 g citric acid
* 2 g malic acid
* 5 g sugar
* A tiny pinch of salt
For my version, I added 2 dashes of cinnamon tincture to the acid solution rather than infusing the syrup. This gives you much more control over the cinnamon intensity.
Cinnamon Tincture
Combine equal parts by weight of crushed cinnamon and high-proof neutral spirit. Let infuse for about two weeks, then strain.
The tincture is potent, so start small and adjust to taste!
