I've made no knead bread for a long time from the NYT article, this is a faster version that's come up in the past year or two and just as good. If you want quick crunchy homemade bread then take a look. You can use whatever your favorite ingredients are to make it your own. This is just what I like most of the time.
3 cups flour
1/2 tsp yeast
1 tsp salt (not coarse)
1 1/2 cups water, needs to be real close to 130 but don't go over or you'll kill the yeast
Mix together all ingredients and cover in a bowl in an oven, not turned on, or other warm space. This is when you can add your own ingredients too or just keep it plain.
Let the dough proof for 3 hours, it should double in size.
Heat the oven to 450 and add parchment paper to a dutch oven or heavy pot. Put that in the oven.
After the oven has come to temp, add the dough, you can make a loaf or divide it up.
45 mins with the lid on.
15 mins with the lid off.
Enjoy fresh hot homemade bread with a nice crunch.
