Did anyone actually see Jesus after He rose from the dead?
Yes, many did. We should take their eyewitness accounts as evidence that the resurrection really happened. After all, that's why accept any historical event as true!
Luke interviewed many eyewitnesses and concluded that there was "infallible proof" that Jesus rose.
The former account I made, O Theophilus, of all that Jesus began both to do and teach, until the day in which He was taken up, after He through the Holy Spirit had given commandments to the apostles whom He had chosen, to whom He also presented Himself alive after His suffering by many infallible proofs, being seen by them during forty days and speaking of the things pertaining to the kingdom of God. (Acts 1:1-3)
So, who all witnessed the resurrected Jesus?
First, three of the Gospel writers did, and the fourth (Luke) interviewed eyewitnesses.
Second, the Disciples did, and it changed their lives.
Third, Paul pointed out a long list of eyewitnesses. He included Peter, the Twelve, 500 at one time, James, all the Apostles (probably in addition to the Disciples), and himself.
We also read in the New Testament that the women who arrived at the tomb were eyewitnesses as were the two men on the road to Emmaus.
