Ingredients & Notes 🌟
#1 Apple Pie Cookies 0:26
1 1/2 tbsp ground flax seeds
2 tbsp water
2/3 cup flour (80g)
2 tbsp cornstarch
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup vegan butter, softened (113g)
1 tsp vanilla or a few drops vanilla aroma
1/4 cup brown sugar (50g)
1 apple, cut into chunks (peeled if preferred)
2 tsp vegan butter
1-2 tsp maple syrup
dash of cinnamon
(cook for 5 min)
→ yields 5-6 cookies
→ bake @180C for 12-15 min
#2 Sage Focaccia 2:47
1/2 cup cold water (125ml)
1/2 cup hot water (125ml)
1 tbsp sugar or agave/maple syrup
2 tbsp olive oil to be added to the water
1 1/2 tsp active dry yeast
310g flour (2 1/2 cups plus 1 tbsp)
1 tsp salt
1-2 tbsp of olive oil to grease your pan with
1 tbsp of olive oil to be massaged into the dough once it has risen
a generous sprinkle of coarse salt
a handful of fresh sage leaves
→ bake for 25-30 min in a preheated oven at 190C
→ yields 1 focaccia, baked in a 20-25cm baking dish
Tip: Instead of mixing the dough for 5 min with a wooden spoon,
you can mix it inside the bowl, using OILED hands.
#3 Birthday Cake Baked Oats 4:31
1 tsp veg oil/butter to grease the ramekins*
1 cup oats (90g)
¼ tsp salt
1 tsp baking powder
1 dash cinnamon
1 tsp vanilla or a few drops vanilla aroma
¼ cup plant milk (60ml)
1 ½ tbsp applesauce
1 tbsp protein powder
2 ½ tbsp vegan yogurt/cream cheese/sour cream
1 ½ tbsp sunflower seed oil
2 tsp vegan sprinkles, plus more for the top
also more vg yogurt/whipped cream/sour cream for the op
→ yields 2
→ bake for 25-30 min @180C
*volume of the ramekins should each be at 180ml-250ml (¾ cup - 1 cup)
#4 Peppermint Hot Chocolate 5:55
½ cup hot water (125ml)
2 tsp unsweetened cocoa powder
½ cup non dairy milk (125ml)
pinch of salt
½ tsp vanilla extract or a few drops vanilla aroma
1-2 tsp sugar/maple syrup (or to taste)
1 peppermint tea bag
→ yields 1 serving

#5 Mini Pumpkin Pies 8:16
pie crust:
2 and 1/2 cups (300 grams) flour, plus if needed 1-2 tbsp more flour when bringing the dough together
1 teaspoon salt
2 ½ tbsp sugar
¾ cup (170 grams) cold vegan butter, cubed
1/2 cup (120 ml) ice water* (100ml water + 1-2 ice cubes)
a little extra flour for the surface and rolling pin
*IMPORTANT do not add the entirety of the water listed, just add 1-3 tbsp at a time, until the dough feels ready to be shaped. Test the consistency of the dough like this: pinch a bit of the mixture together in between your fingers, does it hold its shape? If so, then it’s ready to be dumped onto the counter and shaped into a big ball of dough. If it feels too wet, add a little extra flour.
filling:
2 ½ tbsp cornstarch PLUS 3 tbsp non dairy milk
400g pumpkin purée* (14oz can)
½ cup (100g) sugar
1 ½ tsp vanilla extract or a few drops vanilla aroma
¾ tsp cinnamon
½ tsp pumpkin pie spice (or a dash each of ground ginger, cardamom, nutmeg, cloves, allspice)
3 tbsp vegan sour cream/vanilla yogurt/soft, whipped cream cheese
2 ½ tbsp maple syrup

→ yields 12-14 pies** (bake for 20-25 min @180c)
→ Serve w a dusting of powdered sugar for more sweetness!
**cut out 12-14 circles a 8cm/3inch in diameter
#6 Oat Pancakes 11:44
1 cup oats (90g)
1 1/2 tsp baking powder
a generous pinch of salt
2 tbsp sugar
1 tsp vanilla extract or a few drops vanilla aroma
½ cup non dairy milk (120ml)
1 tsp rice or white wine vinegar
2 ½ tbsp applesauce
light greasing of oil for the pan
toppings of choice
→ serves 1
#7 Lazy Biscoff Rolls 13:18
1 sheet store bought puff pastry (275g)
3-5 tbsp biscoff spread
pinch of sea salt
→ bake for around 20 min or until golden brown and slightly puffed @180C
