Meyer's Elgin Smokehouse, Elgin (2026)
Elgin, Texas has a royal family of its own, and it's not what you'd expect. Meet the Meyers family of Meyers Elgin Smokehouse, keepers of a German sausage recipe that crossed the Atlantic in the 1850s and never lost a step.
What started as a family-only recipe became a small grocery store by the 1940s, then Papa Meyers peddling sausage out of the back of his car, and eventually one of the operations that helped earn Elgin its title as the Sausage Capital of Texas. Today Greg, Gary, and Becky Meyers run it the same way their family always has: grind, flavor, smoke.
I got the full tour, from the factory floor (turns out racking sausage is a lot harder than it looks) to the dinner table, where pit boss Garrett handed me the Cowabunga: sliced brisket piled high with all-beef hot guts, grilled onions, and a sourdough bun that didn't stand a chance. Chase it with a slice of the old Meyers family German chocolate cake and you'll understand exactly why people drive out of their way for this place.
