By the time you get to Godskin Noble you have a lot of options for weapons. You could use Bloodhound's Fang, Iron Ball (I wouldn't personally get this weapon since you have to kill the npc that gives you boiled crab which is really helpful for a littlw extra defense), Banished Knight's Halberd, Grafted Blade, etc. But for me what hits Godskin Noble the hardest is Great Stars. Honestly Great Stars is pretty solid as a main weapon for your lvl 1 playthrough for most of it. I switched to the Star Fist once I could attain them in Leyndell but Great Stars was really helpful until then. Great Stars is great for massive bleed damage as you see me get the Godskin Noble to hemmhorage twice here. In order to one hand Great Stars you need to use Radagon's Soreseal talisman, starscourge heirloom talisman, and the strenghth-knot crystal tear in your wondrous physick. Spiked cracked tear is useful to give you extra damage on those fully charged R2s. Godskin Noble is one of the easier bosses to parry as well. The overhead slam he does has to be his easiest and most telegraphed attack to parry and that was the one I always tried to get him to use on me. You can also parry his quick thrust attack. After parries definitely get a fully charged R2 hit on him. When he starts his second phase hopefully he does his float to body slam attack for you like he did me as it is easily punished, but if he starts doing his neverending roll try your best to use a pillar for cover. Also you can get Godrick's Great Rune which will allow you to use the Flame Grant Me Strength incantation for free extra damage. Also, also you can get the Golden Vow ash of war for some free extra damage at the start of the fight. I didnt have Flame Grant Me Strength or Golden Vow yet in my playththrough but I start using those for all my bosses not long after this one.
