For Morgott you can and should use Margit's shackle to stun him for some strong fully charged R2s while he's down. I tried fighting him without Margit's shackle for about 2 hours and it was not a fun time. He is really, really hard to dodge and retaliate without exhausting your full stamina bar leaving you defenseless. He is super fast and has so many mix ups. If you want to parry him then have fun having to parry him three times where after the first parry his next attack may not even be parryable. His gold spear is a one shot and his spin attack will kill you if you don't have distance before starting to roll. So for me Margit's shackle is a must to avoid all that nonsense.
