Well, that's embarrassing, but I guess you could count it as a win, despite dying to a stray meatball immediately after killing this boss.
For anyone wondering, here's my equipment for this fight: Firelink Greatsword +10, Knight Ring, Flynn's Ring, Red Tearstone Ring and Fireclutch Ring. I also used Pyromancy Flame, Scholar Ring and Rapport pyromancy to use on one of the priests in the room downstairs, so I could get an additional buff from him, which resulted in ridiculous damage output at the beginning of this fight (not that it wasn't ridiculous without it). The Scholar Ring was swapped for Knight Ring right before entering the boss room, so my character could use the sword.
The fight could go better, I failed to bait his specific attacks twice and got lucky that he didn't use something else while I was mid-attack.

That fight was pretty uneventful tbh, it doesnt show many of Oceiros attacks and how to avoid them. On the other hand most of his attacks are either unavoidable, avoidable but followed by the unavoidable ones, or avoidable if youre lucky, so Im somewhat fine with what I got. I got kinda annoyed by the number of times when he oneshot me in the first seconds of the fight with one of his quick swings, fighting him feels like a lottery a lot of the time.
