1/2 - 3/4 cup raw cashews, soaked
3 cans tuna
half an onion, chopped
2 ribs celery, chopped
1 small can of mushroom, chopped
2 TBSP roasted red pepper strips, optional
1 cup frozen peas
1/2 pound wide egg noodles, cooked.
salt, pepper, garlic powder, cayenne powder to taste
10 buttery crackers, crushed, optional

Fry veg in a small amount of oil. add tuna, blended cashews and peas. Season to taste. Serve as is or place in a casserole dish and top with cracker crumbs. Bake in the oven at 350 for 10-15 minutes.
