Creamy Plant-Based Potato Leek Soup  @nutritionstudies

This creamy potato and leek soup is like a baked potato in a bowl. It comes together easily and quickly, with less than ten ingredients. It’s perfect to pair with a loaded veggie sandwich or a delicious hearty salad.

Ingredients:
½ Cup yellow or white onion, chopped
½ Cup celery, chopped
2 Cups leeks, chopped
4 Cups Yukon potatoes, diced
1 ½ Cups coconut milk
2 Cups water or vegetable broth
2-3 Tbsp water
1 tsp thyme
2 tsp garlic
Salt and pepper to taste

Method:
1. In a stock pot, add onions, celery, and leeks with 2-3 Tbsp water to help sauté. Cook for about 5 minutes until all are softened.
2. Add in spices and the potatoes, cooking for an additional 2-3 minutes.
3. Next, add coconut milk and water/ broth. Cover and simmer until potatoes are very tender, for about 20-25 minutes.
4. Add more water if the mixture is pretty thick.
5. Pureé the mixture in a high-speed blender or with an immersion blender until desired consistency is achieved.
6. Serve hot with toppings such as coconut bacon, green onions, or vegan sour cream.
