This creamy, cheesy butternut squash sauce is a fun new take on mac 'n cheese! It is so easy to make, just a few ingredients, and is so tasty you'll be eating it all fall!

Ingredients:
-Half of a large butternut squash and one small squash
-1.5 Cups oat milk (or other plant milk)
-1 Cup chopped yellow onion
-2 finely chopped garlic cloves
-2 Tbsp apple cider vinegar
-Dash of cayenne pepper
-Dash of black pepper
-1/4 Cup nutritional yeast
-Your favorite pasta

Method:
1. Start by roasting the butternut squash. Cut squash in half, and cook at 375 degrees for about 45 minutes. Ensure the squash is very tender.
2. Scoop out 2 Cups of the cooked squash and blend together with the oat milk. Blend until creamy.
3. Next, in a frying pan add the onions and garlic. Add a little water if they begin to stick.
4. Adding squash mix, apple cider vinegar, pepper, cayenne pepper, and nutritional yeast. Stir until combined completely.
5. Pour over cooked pasta and enjoy!
