A lot of people don’t realize pumpkin is a superfood – a good source of fiber and excellent source of vitamin A and the antioxidant beta-carotene per serving -- versatile enough to work in tons of different recipes all year long. Pumpkin Waffles
Ingredients
3/4 cup pumpkin puree
2 eggs
1 Tbs coconut oil
2Tbs maple syrup
1Tsp vanilla
1 cup coconut milk
1.5 cups gluten-free flour
2 tsp pumpkin pie spice
2 tsp baking powder
1/2 tsp baking soda
Directions:
Make sure your waffle iron is turned on and hot.
Next, add the wet ingredient into a bowl and mix.
Then Add the dry ingredients to the wet and mix really well.
Pour about 1/2 or more cups of batter onto the waffle make.
Close and let cook for 2-3 minutes.
Serve with whipped cream. Or do Like I did and add almond butter and syrup.
