Ingredients
225g Plain Flour
10g Baking Powder
20g of Lime Rind (About 1 lime)
125g of Melted Butter (Cooled)
2 Eggs
250ml of Coconut Milk (Full Fat)
Bake in a preheated over 180c 350f for 45 minutes or until a skewer in the centre comes out clear.
Allow to cool in the tin for 5 minutes before removing from the tin and allow to completely cool before icing
To make the icing,
240g of Icing Sugar or Confectioners Sugar
40ml of lime juice
Top with some toasted coconut and more lime rind.
