This Weber Grills recipe brings bold flavor to a simple summer meal. In this Weber Grills recipe, Chef Matt Abdoo grills herb-marinated Chicken Spiedies over high heat for a juicy center and a smoky char. The chicken is served on crusty Italian bread and topped with tangy pickled chilies. It is an easy dish for weeknight dinners, backyard cookouts, and gatherings with family and friends.
Chicken Spiedies on Grilled Bread
Serves: 4
Prep Time: 15 minutes (plus 1 hour marinating)
Cook Time: 10–12 minutes
Ingredients
Chicken
2½–3 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
2 crusty Italian loaves or baguettes
½ cup quick pickled red chilies (recipe follows)
Spiedie Sauce
½ cup olive oil
½ cup vegetable oil
½ cup red wine vinegar
¼ cup lemon juice
1 tablespoon honey
4 garlic cloves, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh mint
1 teaspoon dried oregano
1 teaspoon granulated onion
1 teaspoon kosher salt
½ teaspoon ground black pepper
Directions
1. Place the cubed chicken in a large resealable plastic bag.
2. In a medium bowl, whisk together all of the Spiedie Sauce ingredients until well combined.
3. Pour half of the sauce over the chicken and seal the bag. Reserve the remaining sauce in a covered, food-safe container for serving.
4. Marinate the chicken for 1 hour in the refrigerator.
5. Thread the marinated chicken onto skewers.
6. Preheat a clean grill to high heat.
7. Grill the skewers for 8–12 minutes, turning every 2–3 minutes (a quarter turn each time), until the chicken is lightly charred and reaches an internal temperature of 165°F.
8. Transfer the cooked skewers to a plate and let rest for a few minutes.
9. Slice the bread in half and grill the cut sides until toasted and lightly charred.
10. Drizzle the grilled bread with some of the reserved Spiedie Sauce.
11. Remove the chicken from the skewers and pile it onto the grilled bread.
12. Top with the pickled red chilies, drizzle with additional Spiedie Sauce if desired, and serve immediately.
Quick Pickled Red Chilies
Makes: About 1 cup
Prep Time: 5 minutes
Cook Time: 30 minutes
Ingredients
3 red jalapeños
1 cup red wine vinegar
½ cup water
¼ cup grenadine
2 tablespoons granulated sugar
1 teaspoon kosher salt
1 bay leaf
Directions
1. Slice the red jalapeños into ¼-inch rounds and place them in a heatproof mason jar or bowl.
2. In a small saucepan, combine the red wine vinegar, water, grenadine, sugar, salt, and bay leaf. Bring to a simmer over medium-high heat, whisking until the sugar and salt have dissolved.
3. Once the pickling liquid reaches a boil, remove it from the heat and carefully pour it over the sliced chilies.
4. Let the chilies stand for 30–40 minutes. For the best flavor, refrigerate them overnight before serving. Store refrigerated until ready to use.
