In this video I show how you can manipulate village generation by changing nbt structures in your game and how to use jigsaw blocks to achieve specific layout of your city/dungeon/building etc.
This obviously requires modifying the game jar, which would be a very useful tool for game admins where they can influence world generation for customized vanilla servers. Its like you would work with datapacks, except inside the game.
Here are examples of buildings and layouts I shown today
Village hospital for Taiga:

Various City Layouts
- with copy scripts to rename to match desert village structures as per 19w03c, so you can use your own
- with server patch script - you would need to unpack your server file to use it and place it in the appropriate location, and name your world 'desert' (you will figure out), otherwise, you can just use drag and drop on your zip program to patch it anyways)
