In this video, I head to the woods in the rain to get festive! After setting up a tarp shelter and adorning my day camp with fairy lights, I get to work making mulled wine and mince pies that I bake in my billy can on my Firebox stove I hope you enjoy the video and I hope you all have a wonderful festive season! See you in the New Year!!

Happy Christmas!

Recipes:

Mince pies (makes 12)

350g plain flour (sifted)
100g caster sugar
pinch of salt
100g butter (cubed and cold)
1 egg
Mince meat filling

Rub the butter into the dry pastry ingredients until you have a consistency like breadcrumbs, mix in the egg. Roll out and cut into discs to suit your pie tins. Spoon the filling in, brush the edges with egg and place your lid discs on top. Crimp with a fork (or Opinel knife ;-) piece the lid and brush with milk or egg. Bake for 20mins at 180 degrees C.

Mulled wine

1 bottle red wine
1 lemon (sliced)
1 orange (sliced)
2 star anise
2 cloves
1 slick of cinnamon
A good glug of brandy

Put all the ingredients into a pan and heat slowly, simmering for 6 mins - do not allow to boil.
