These chocolate caramels are the real deal—soft, melt-in-your-mouth magic with just enough chew to make your jaw happy. Deep cocoa flavor, buttery richness, a sprinkle of sea salt on top if you’re fancy. They take a little time and a candy thermometer, but honestly? WORTH. IT.

YOU’LL NEED:
⚬ 1 cup unsalted butter
⚬ 1 (14 oz) can sweetened condensed milk
⚬ 1 cup light corn syrup
⚬ 2 cups brown sugar
⚬ 1 cup semi-sweet chocolate chips
⚬ 2 teaspoons vanilla extract
⚬ 1/4 teaspoon salt
⚬ 1 teaspoon flake salt (optional but delightful)

HOW TO MAKE ‘EM:
1️⃣ Butter a 9x13-inch baking dish using about 1 tablespoon butter. Line the bottom and sides with parchment or wax paper. Set aside.

2️⃣ In a large saucepan over medium heat, melt the remaining butter.

3️⃣ Stir in sweetened condensed milk, corn syrup, and brown sugar. Keep stirring constantly with a rubber spatula—scrape those sides and bottom so nothing burns.

4️⃣ Once smooth, stir in the chocolate chips until completely melted and combined.

5️⃣ Keep cooking over medium heat, stirring nonstop, until the mixture gently simmers.

6️⃣ Clip a candy thermometer to the side of the pan. Continue cooking, stirring constantly, until it reaches the soft-ball stage: 235°F to 245°F.
👉 Use the lower end for high altitude, higher end for sea level.

7️⃣ Remove from heat and stir in vanilla extract and salt.

8️⃣ Carefully pour the hot caramel into your prepared dish. Sprinkle with flake salt if you’re going for that sweet-and-salty vibe.

9️⃣ Let it cool at room temp for 2 to 3 hours, until set and sliceable.

🔟 Once firm, cut into 1-inch squares. Wrap each one in wax paper like the little treasures they are.

STORAGE
🫙 Keep in an airtight container at room temp for 2–3 weeks.
🎁 Wrap them up in wax paper, toss them in tins or jars, and feel like a straight-up holiday hero.
