I make my Chilaquiles a little different and I like to think better using eggs in my recipe. I hope you try this and hope you like this too!
Sauce Ingredients:
6 roma tomatoes
1 jalapeno
1/4 small onion
1 garlic clove
1 and 1/2 teaspoons ancho chili pepper powder
1 and 1/2 teaspoons oregano (I forgot that)
1/2 teaspoon cumin powder (I forgot that)
salt to taste
Mix this in the blender to make a fresh uncooked sauce.
Ingredients:
8 to 10 corn tortillas
1/4 cup corn oil or vegetable oil or lard
salt
2 eggs
queso fresco
cilantro
Cut your tortillas into triangles and fry until crisp, salt the batches of tortillas.
Take your fried tortillas and add them to a bowl with your beated eggs.
Fry for one minute in the skillet, then add your sauce and fry for one more minute... Serve immediately with queso fresco and cilantro.
I did not use much salt in this and if you taste and think something is missing, you need a bit more salt :)
This is a medium to mild dish, not too spicy at all.
