Ingredients:
4 tablespoons butter
1 tablespoon olive oil
1 cup onions diced
1/2 cup celery diced
3 cloves garlic minced
1/4 cup flour
1 quart half and half
28 ounces chicken broth
1/2 teaspoon thyme
1/2 teaspoon parsley flakes
1/4 teaspoon ground nutmeg
1 cup spinach leaves coarsely chopped
1 cup carrots shredded
1 cup chicken breast cooked and diced
16 ounce package of gnocchi
Melt butter and olive oil in a large heavy bottomed pan
Add onion, celery and garlic and cook till onion is soft
Add in flour and whisk into mixture and cook 1 minute.
Whisk in 1/2&1/2 and bring to a simmer till thickened
Whisk in the chicken broth and simmer till again thickened.
Add remaining ingredients and simmer till heated through.
