On the way back from an amazingly fun weekend trip to Kansas City with friends, we stopped through Springfield, MO on the way home for a bite... Actually, A LOT of bites! The source of the bites is Norma's Carriage House Diner.
This was my first ever omelette challenge, so I knew I had to scarf the eggs down as quickly as possible. Fortunately, the meats and veggies they mix into this omelette are almost exactly my favorite things to put into an omelette. The wild card here was that they had a new chef in the kitchen who had never cooked the challenge before, so I wound up being the lucky recipient of a dramatically larger (about 3x more) than usual portion of hashbrowns!
With small utensils only and a cheering section full of my peers, was I able to tackle this humungous breakfast in only 30 minutes?
