BASE INGREDIENTS
⚬ 3 cups raw nuts (pecans, almonds, walnuts—your pick)
OVEN-BAKED CANDIED NUTS (Classic Method)
You’ll need:
⚬ 1 large egg white
⚬ 1 tablespoon water
⚬ 1 cup granulated sugar
⚬ 2 teaspoons ground cinnamon
⚬ 1 teaspoon salt
How to make them:
1️⃣ Preheat oven to 300°F (150°C). Line a rimmed baking sheet with parchment paper.
2️⃣ In a large mixing bowl, whisk together egg white and water until frothy.
3️⃣ Add nuts and toss until well coated.
4️⃣ Add sugar, cinnamon, and salt. Stir to coat.
5️⃣ Spread coated nuts in an even layer on the prepared baking sheet.
6️⃣ Bake for 30 to 35 minutes, stirring halfway through, until dry and crisp.
7️⃣ Cool completely on the pan. Break apart any clusters before serving or storing.
STOVETOP GLAZED CANDIED NUTS (Quick & Glossy)
You’ll need:
⚬ 1 cup granulated sugar
⚬ 2 tablespoons water
⚬ 1 tablespoon unsalted butter (optional)
⚬ 1/2 teaspoon salt
How to make them:
1️⃣ In a large heavy-bottomed skillet over medium heat, combine sugar and water.
2️⃣ Stir constantly until the sugar is fully dissolved.
3️⃣ Add nuts and continue cooking, stirring constantly, until the sugar caramelizes and turns deep amber, about 8 to 10 minutes.
4️⃣ Remove from heat. Stir in butter (if using) and salt.
5️⃣ Quickly transfer nuts to a parchment-lined surface and separate with forks or a spatula.
6️⃣ Cool completely before serving or storing.
STORAGE
