Creamy mushroom pasta, all made in ONE POT! This easy dinner is loaded with a full pound of mushrooms, plenty of garlic, freshly grated Parmesan, and just a little heat from red pepper flakes. The fettuccine cooks right in the chicken broth, so there’s no separate pot of boiling water and no draining.
It’s creamy, cheesy, packed with mushrooms, and cleanup couldn’t be easier.

ONE POT CREAMY MUSHROOM PASTA
INGREDIENTS
2 tablespoons olive oil
16 ounces sliced mushrooms
1 tablespoon minced garlic
1/2 teaspoon crushed red pepper flakes, or up to 1 teaspoon
5 cups chicken broth
1 teaspoon salt
1 pound fettuccine
1 cup heavy cream
1 1/2 cups freshly grated Parmesan cheese
INSTRUCTIONS
1. Heat the olive oil in a 6-quart pot over medium-high heat.
2. Add the sliced mushrooms and cook for 5 minutes, until softened and starting to brown.
3. Add the minced garlic and crushed red pepper flakes. Cook for 60 seconds.
4. Pour in the chicken broth and season with salt. Add the fettuccine, making sure the pasta is submerged in the liquid. Break the pasta in half if necessary to fit.
5. Cook for 10 minutes, stirring regularly so the pasta doesn’t stick to the bottom of the pot.
6. Add the heavy cream and continue cooking for another 5 to 8 minutes, until the pasta is al dente and most of the liquid has been absorbed. Do not drain.
7. Turn off the heat and stir in the freshly grated Parmesan until completely melted.
8. Serve with additional salt and black pepper to taste.
QUICK TIPS
• Use cremini, baby bella, or white button mushrooms.
• Start with 1/2 teaspoon red pepper flakes for a little heat, or use the full teaspoon if you like things spicy.
• Stir the pasta regularly while it cooks to keep it from sticking.
• Don’t drain the pasta! The remaining cooking liquid combines with the cream and Parmesan to make the sauce.
• The sauce will continue to thicken as it sits.
