Today I’m sharing one of the easiest practical meal prep ideas I’ve been making lately—homemade grab-and-go sub sandwiches! These are perfect for keeping in the fridge for quick meals, and they also freeze beautifully for lunchboxes and busy days.
I’ve been making these for my dad using my homemade sub rolls, deli meats, and sliced cheeses. I like to keep them simple with just meat and cheese so they hold up well, and then you can add your favorite condiments when you’re ready to eat.
These are great for:
quick lunches
meal prep
stocking the fridge
freezer sandwiches
lunchboxes
busy families
caregivers
anyone who wants something ready to grab and go
Sandwich combinations I made:
Ham + Provolone
Turkey + Muenster
Ham + Turkey + Provolone
Chicken + Gouda
If you freeze these, just pop one into a lunchbox frozen and by lunchtime it should be thawed and cold, ready to eat. Just pack condiments separately if desired.
