First thing that I did once I died to her was Equip the Galeguard body piece. It has Shock Resist on it. I actually forgot to use one of the medicines for Shock Resist, but they last a long time and while active you become IMMUNE to shock (the status effect build up, not the damage though).
As for her attacks, her normal moves were pretty standard tells. 1-2 punches so to speak. The attacks while she was a dragon were pretty rhythmic, once I realized it was the same cadence for each hit, I could just go, Dodge, (count to 2) and repeat.
Once again, as with humanoid bosses, a charged heavy knocks her down and gives you a great window to get some damage in.
