Today I’m taking you behind the counter in Japan at Asakusa Yoroiya, a family run Japanese ramen shop just steps from Sensoji Temple in Tokyo’s historic Asakusa district. Opened in 1992 by the Matsumoto family, this local restaurant specializes in traditional shoyu ramen, serving a comforting bowl that has been loved by locals for generations.
Their Japanese ramen starts with a chicken and pork based broth, layered with umami from niboshi, bonito flakes, and kelp, then finished with their signature shoyu soy sauce flavor. But unlike most ramen restaurants in Tokyo, Yoroiya opens early, making it a unique spot to experience breakfast ramen in Japan.
The shop started serving ramen in the morning last year, quickly becoming popular with both local regulars and international visitors exploring Asakusa. Extending the business hours also helped Shoichi san raise employee wages following rising costs after COVID. Although ramen trends in Japan constantly change, Shoichi san and his father continue refining their recipe without losing the traditional taste their customers love. By listening to their employees, customers, and each other, this father and son team is finding a way to preserve their family’s Japanese food legacy while adapting their ramen shop for the next generation including vegan ramen options.
