Today I’m taking you behind the counter in Japan at Marufuku Kyoto, a family run Japanese bento and sozai shop just three minutes from the Kyoto City Central Wholesale Market. Sozai are Japanese prepared side dishes commonly served alongside home cooked meals, and this local Kyoto food shop uses fresh seafood sourced through the family’s generations old fish wholesale business to create everything from traditional Japanese cuisine to sashimi, sushi, and bento. Yoshimi san has been running the shop for five years, but its story began during one of her family business’s most difficult periods. During the pandemic, restaurant closures devastated their seafood wholesale business, leaving them with excess inventory and few customers. With no restaurant experience and a background in fashion, Yoshimi stepped in to help save the business. Around the same time, Ichimura san, an experienced Japanese chef who had worked in Kyoto’s historic Gion district, was looking for a new opportunity. He joined as head chef, developing the menu while teaching Yoshimi the fundamentals of Japanese cooking. Their relationship was not always easy, but years of working together built a deep sense of trust. Today, their ability to listen to customers and constantly create new Japanese food has transformed this small fish market bento shop into a favorite among Kyoto locals.
