This is my first cook on the Barrel House Cooker, a BHC model 14D (14 inch Deluxe) The ribs came from SAMS and were Smithfield extra meaty baby backs. They were cooked for 4.5 hours using Kingsford charcoal. I used the hanging rack H-Frame and hanging hooks supplied with the cooker. The temp maintained 250 for first hour and half, after opening the lid, the temp went up to 260 during the second hour, then 270 the third hour, and ended up about 305 the fourth hour. Each time the lid was opened, it allowed more oxygen to get the charcoal hotter and the temp would rise. I did not wrap the ribs like I normally do, but let them cook all the way unwrapped. They turned out very colorful, tender, and very good. I was very pleased the way this small cooker did. I put in several chunks of apple wood for smoke flavor at the beginning.
