This video is cooking a prime rib standing roast on the Pit Barrel Cooker. It came from SAMS CLUB and weighed 5.11 lbs. I applied a garlic butter, along with thyme, rosemary, and some thyme lemon grinder rub, salt, along with coarse ground pepper n salt. It took 2 hours and 15 minutes to cook to an internal of 123 degrees F. It was removed from the cooker, then tented with foil for 45 minutes, then sliced into thick prime rib steaks for serving. Because it was not the same thawed temp all the way thru, it measured a lower temp in the middle while the outer third on each side was higher. It came out a medium rare to rare because of this. It is important to have the meat room temperature all the way through.
