These apple fried pies or hand pies are delicious. You could use this recipe and make it your own.
Apple Fried Pies Recipe
Pie Dough
3 C Flour
1 tsp. Salt
2/3 C Shortening
4 Tbsp. Butter (Cold)
1/4 - 1/2 C Ice Water
Combine the flour and salt in a bowl. Add in the shortening and butter. Use a pastry blender, fork, or food processor to combine until you have a crumbly texture. Next add in the ice cold water (not the ice) and mix just until your dough comes together. I find it easiest to use my hands. Place the dough on some plastic wrap and shape into a disc. Wrap it up and place it in the fridge for at least an hour. (This dough can also be frozen and used at a later time. Just make sure to wrap it really well and then put it in a freezer baggie.)
Apple Pie Filing
4 Granny Smith Apples (or apples of your choice)
3 Tbsp. Butter
1/4 C Brown Sugar
2 Tbsp. White Sugar
2 Tbsp. Lemon Juice
1 tsp. Cinnamon
1/4 tsp. Nutmeg
pinch of Salt
1 Tbsp. Corn Starch + 1/3 -1/4 C Water
First peel the apples and dice into bite size pieces. In a large skillet add in the butter. Add in the apples and let cook for a few minutes in the butter. Add in brown sugar, white sugar, lemon juice, cinnamon, nutmeg, and salt. Stir and let simmer until the apples are tender. Once your apples are tender, combine the cornstarch and water. Add it to your apples and let cook for a few seconds until the sauce has thickened. Set aside to cool completely.
To assemble the fried pies, take half of your pie dough and roll it out. Cut oval shapes from your dough. I roll these ovals even thinner and then place some filling on one half. Fold the other half over and seal the edge with water. Use a fork to close the edge.
Fry in oil on the stovetop until golden brown. Once finished cooking, place on a paper towel lined tray and sprinkle with sugar (while they are still hot).
