A perfect low and slow braise using the perpetually under-valued beef shin/shank, a cut full of fabulous flavor, tons of sticky cartilage and luscious bone marrow that slips out and melts into the sauce. There's also onions, garlic, tomato paste and a drinkable but not expensive wine -- that's kinda it. It's low-intervention winter cooking at its finest and yes, we’re using a heavy-bottomed pot because we are adults and we own one. Cook this for hours, take lots of little bites along the way, and put it on pasta (or don’t, but you should). Baby Charlie makes a special appearance in his finest oversized pants, mostly to supervise and look emotionally invested in the process.
