Recipe for this Olive Oil Blueberry Cake in this week’s newsletter (alisoneroman.com/newsletters/). It’s not all that sweet, denser than a muffin, is made with olive oil and yogurt, contains chia and flax (because the addition of both keeps this cake so delightfully tender for days and allows for way more fruit in the batter than usual), has a bit of cinnamon, very crunchy edges and so many blueberries. My household (one adult) has agreed it is the most delicious cake I’ve made in a long time. If I opened a version of Erewhon (I won’t), I would serve this cake.
