A 2014 meta-analysis of over 600,000 participants, published in the Annals of Internal Medicine, found no association between saturated fat consumption and cardiovascular disease. It took 12 years for government guidelines to reflect this. Healthy fats include butter, ghee, and extra virgin olive oil. Processed, solvent-extracted seed oils are a different matter.
