What is your go-to Mexican food when traveling south of the border? Despite some traditional beliefs, Mexican food can be quite healthy. This is mainly because the food is corn based, along with other nutrient rich foods like tomatoes, squash, pumpkin, chia seeds, radishes, and beans.
When I first came to Mexico, I was worried about all the carbs that I would be eating. But Ive discovered that there is an abundance of fresh produce and spices that I can choose from.
In this short I display a shrimp and chicken taco with romaine lettuce, instead of the traditional corn or flour shell. It had fresh herbs, mushrooms and shredded carrots, topped with a wonderful ginger dressing. NO CHEESE. And surprisingly I didnt even miss it.
10 Mexican Foods to Try for Better is a good read by Kim Rose-Francis, RDN and Krista Linares, MPH that provides some valuable insight on the nutritional value of some of Mexicos staple foods.
