What is your go-to Mexican food when traveling south of the border? Despite some traditional beliefs, Mexican food can be quite healthy. This is mainly because the food is corn based, along with other nutrient rich foods like tomatoes, squash, pumpkin, chia seeds, radishes, and beans.
When I first came to Mexico, I was worried about all the carbs that I would be eating. But I've discovered that there is an abundance of fresh produce and spices that I can choose from.
In this short I display a shrimp and chicken taco with romaine lettuce, instead of the traditional corn or flour shell. It had fresh herbs, mushrooms and shredded carrots, topped with a wonderful ginger dressing. NO CHEESE. And surprisingly I didn't even miss it.
