There has no region in Italy where don’t have wine because wine is a fundamental part of their culture. Prosecco is one of the most famous wines in the world. The laborers of the area started to renovate their way to produced Prosecco in last 20-25 years ago. A few years ago, Fermentis started new projects to produce new yeast fully dedicated to Prosecco and the product is SafŒno™ PR 106.
SafŒno™ PR 106 is a real yeast strain to produce bases and sparkling wines destined to obtain the various classes of prosecco. It is particularly promoting the release of terpenes and is therefore suitable for fresh and floral terpene varieties.
New SafŒno™ PR 106 was launched for winemakers to produce premium quality sparkling wine. This active dry yeast has an intense fruity and floral aromatic profile, combining acidity and sweetness while reducing sparkling base wine’s eventual defects. Its orientation towards fruity ethyl esters brings complexity to the wine. Fermentis strongly recommends SafŒno™ PR 106 for premium Prosecco bases.
